Right now, all of the windows in my house are open, there is a pleasant light breeze, the sun is shining in a cloudless blue sky, and the thermometer reads 83°. It's not your typical Fall weather, but it <i>is</i> absolutely gorgeous and I'll take it for as long as Mother Nature dishes it out.<br />

Despite the balmy weather, when the calendar says Fall, it is time for to bake for Fall. No matter what the thermometer says.<br />

Today I kicked off Fall Baking Season with these delicious Twice Glazed Pumpkin Scones. They are just the right blend of sweet, spice, and pumpkin. The best part is that they are light and moist and basically melt in your mouth with each bite.<br />

<b>Ingredients:</b><br />
<i>For the Scones</i>:<br />
2 cups all-purpose flour<br />
1/4 cup and 3 tablespoons granulated sugar<br />
1 Tablespoon baking powder<br />
1/2 teaspoon salt<br />
1/2 teaspoon ground cinnamon<br />
1/2 teaspoon ground nutmeg<br />
1/4 teaspoon ground cloves<br />
1/4 teaspoon ground ginger<br />
6 tablespoons cold butter, cut into 1-inch cubes<br />
1/2 cup canned pumpkin puree<br />
3 tablespoons heavy cream<br />
1 large egg<br />
<br />
<i>For the Powdered Sugar Glaze:</i><br />
1 cup plus 1 tablespoon powdered sugar<br />
2 Tablespoons milk<br />
<br />
<i>For the Spiced Glaze:</i><br />
1 cup plus 3 tablespoons powdered sugar<br />
2 tablespoons milk<br />
1/4 teaspoon ground cinnamon<br />
1/8 teaspoon ground nutmeg<br />
1 pinch ground ginger<br />
1 pinch ground cloves<br />

<b>Directions:</b></div>
<div class="instructions">
Preheat the oven to 425°F. Line a baking sheet with parchment paper; set aside.<br />
<br />
In the bowl of a stand mixer fitted with the paddle attachment, stir
together flour, sugar, baking powder, salt, cinnamon, nutmeg,
cloves and ginger.<br />
<br />
Add the butter and toss with a fork to coat with the
flour mixture. Mix on medium-low speed until the texture resembles
coarse cornmeal, with the butter pieces no larger than small peas.<br />
<br />
In a separate bowl, whisk together the pumpkin, cream and egg.
Fold wet ingredients into dry ingredients, and form the dough into a
ball.<br />
<br />
Pat out dough onto a lightly floured surface and form into a
1-inch thick rectangle about 4 inches by 12 inches. Use a large knife to
slice the dough making three equal portions. Cut each of the portions
in an X pattern (four pieces) so you end up with 12 triangular slices of
dough. Place on prepared baking sheet.<br />
<br />
Bake for 14-16 minutes, or until
light brown. Place on wire rack to cool.<br />
<br />
While the scones are cooling, make the powdered sugar glaze by mixing
the powdered sugar and milk together until smooth. When scones are cool,
use a pastry brush to spread plain glaze over the top of each scone. (<i>Tip: Stick the parchment paper that you used to bake the scones on underneath your cooling rack to catch all the drips </i><i><i>when you glaze the scones</i>--way less clean up later!</i>)
Allow to glaze to dry until firm.<br />
<br />
While the powdered sugar glaze is firming, combine all of the
ingredients for the spiced glaze. Drizzle over each scone and allow the
icing to dry before serving (about an hour).</div>

This is my grandmother's roll recipe from my dad's side, written in my mother's hand on a small piece of notebook paper. It didn't even state what the recipe was until a few years ago when I quickly penned in "Rolls" at the top. For as long as I can remember, my family has been making these rolls. We've had them for Easter, Thanksgiving, and who knows how many Sunday dinners. They happen to be quick, tasty, perfect for leftover turkey or ham sandwiches, and as it turns out- made for a crowd.<br />

But it seems that I forgot just how much it made. In a rush, I pulled them out for Easter dinner. I quickly scanned the ingredient list and seeing it only called for five cups of flour, proceeded forward. It wasn't until I had already mixed in the yeast, oil, and egg that it calls for...FIVE <i>more</i> CUPS of flour- What?! Needless to say, I ended up with an excess of four cookie sheets worth of tasty rolls. My grandmother must have been feeding our entire extended family when she passed on the recipe. We all gorged ourselves on as many rolls as we could eat, even sneaking a few after dinner. And I froze the rest -which isn't so bad in the end.</div>

3/4 cup sugar</div>

3 1/2 cups warm water</div>

Directions: </div>

1. Preheat oven to 425°. Lightly grease 2-4 baking sheets or line with parchment or silpats.</div>

2. In a large mixing bowl, combine yeast, sugar and water. Stir to combine. Let rise for 15 minutes. </div>
<div class="" style="clear: both; text-align: left;">
3. Add to yeast mixture: egg, oil, salt, and FIVE cups of flour. Stir to combine. Dough will be sticky and wet. Continue to stir until all flour is wet and all ingredients are well combines. </div>

4. Add five more cups of flour, one at a time until dough forms a soft, cohesive, but slightly shaggy dough. </div>
<div class="" style="clear: both; text-align: left;">
5. Dump dough out onto a well-floured board, mat, or counter. Continue to knead by hand a few strokes until a dough becomes smooth. </div>
<div class="" style="clear: both; text-align: left;">
6. If needed, re-flour board to prevent sticking, and roll dough out to about 1/2 inch thickness. Using a floured biscuit cutter (you can use a floured glass in a pinch) cut dough into circles. Fold each circle in half and place in baking sheet about 1/4 in. apart. Using your index and middle fingers, gently press the folded dough together. (think poking it with your first two fingers). </div>

7. After the cookie sheet is full, let rolls rise about five minutes. </div>

8. Bake in preheated oven 8-10 minutes.</div>

<i>P.S. When talking with my older sister, she reminded me of a time when we made these at my daughter's baby blessing. Still noticing that it only called for five cups of flour, we doubled the recipe knowing we needed a lot for the big family gathering. Well, 20 cups of flour later, it was all my mom, sisters, grandmas and I could do to get the dough rolled out, cut, and into the oven before it rose up over the bowls, counter and pans. We spent the afternoon baking them all up and sent everyone home after dinner with at least dozen rolls! </i></div>

I love St. Patrick's Day food. It's just yummy and hearty and filling. Makes me feel like I could go throw some logs with bagpipes playing in the background.<br />

I ran to the grocery store Saturday afternoon to pick up the ingredients for the annual <a href="http://www.outofmysisterskitchen.blogspot.com/search/label/St.%20Patrick%27s%20Day" target="_blank">Corned Beef and Cabbage</a> dinner on Sunday. I was feeling a bit impatient though, thinking about the fact that I had to wait a whole other day before I could enjoy that yummy dinner. I gave into temptation and grabbed the ingredients for this quick dip as our little St. Patrick's Day eve snack. It's all the goodness of a hearty Reuben sandwich, comes together in a scant 15 minutes and was gobbled up by all members of the family.<br />

2. In a large bowl mix together the cream cheese and thousand island dressing. Add swiss cheese, chopped corned beef and sauerkraut, mix until thoroughly combined.<br />
3. Spray a pie plate or other shallow serving dish with cooking spray. Spread mix evenly in dish. <br />
3. Bake for about 15 minutes, or until bubbly around the edges. Serve
hot with pretzel crisps or cocktail-size rye bread squares.<br />

It's like they were created with friendship in mind; a recipe meant to be passed around, copied over and over and nestled into the cookbook of every kindred spirit's home. They are simple and universally loved.<br />

This cake is one of those.<br />

The first time I tasted this cake was when we were living in the South. My friend, Amanda, was holding a morning playgroup and she made this yummy cake for everyone. She got the recipe from her friend, Christy, the author of <a href="http://www.the-girl-who-ate-everything.com/about-me" target="_blank">The Girl Who Ate Everything</a>. Amanda then passed the recipe to me and every time I've made and shared it...I've passed the recipe on to another friend and another friend and another friend.<br />

3 cups flour</div>
¼ teaspoon salt<br />
1 cup sugar<br />
4 teaspoons baking powder<br />
1 ½ cups milk<br />
2 eggs<br />
2 teaspoons vanilla<br />
1/2 cup (1 stick) real butter, melted<br />

<b>Topping:</b><br />
1 cup (2 sticks) real butter, softened<br />
1 cup brown sugar<br />
2 tablespoons flour<br />
1 tablespoon cinnamon<br />
3/4 cup chopped pecans, (optional) (I never add these, but I bet it would be tasty!) <br />
<br />
<b>Glaze:</b><br />
2 cups powdered sugar<br />
5 tablespoons milk<br />
1 teaspoon vanilla<br />
<br />
<i>Instructions:</i><br />
Preheat oven to 350°F.<br />
<br />
1. In an electric or stand mixer mix the flour, salt, sugar, baking
powder, milk, eggs and vanilla. Once combined well, slowly stir in the
1/2 cup melted butter. Pour batter into a greased 9 x 13 inch baking
pan.<br />
<br />
2. In a large bowl, mix the 2 sticks of softened butter, brown sugar,
flour, cinnamon and pecans until well combined. Drop evenly over cake
batter by the tablespoonfuls and use a knife to marble/swirl through the
cake. (Be careful not to over-swirl or all of your topping will end up at the bottom of the cake. This is from personal experience. <i>*ahem*</i>)<br />
<br />
3. Bake at 350°F for 25-30 minutes or until toothpick comes out
nearly clean from center. <br />

4. Place powdered sugar, milk and vanilla in a large bowl. Whisk until

Unfortunately, the weather does not agree with me on this point and is stubbornly sticking with Winter and cold winds and threats of school-canceling snowstorms. So I've had to resort to cooking spring/summery foods to bring Spring inside.<br />
<br />
These soft lemony cookies are just what the Spring-doctor ordered. They have just a hint of lemon in the cookie and a hint of lemon in the frosting...just enough lemon to make you think budding tulips, sunny blue skies, and a gentle breeze. If you have any leftover, make sure to store them in the refrigerator; my kids voted that these cookies taste best cold.<br />

In a separate bowl, sift together flour, salt, and baking soda. Add dry ingredients to butter mixture and mix until combined. Add milk and lemon juice. Mix until completely combined. Roll dough into Tablespoon-sized balls and place on a greased baking sheet. Bake for 10-12 minutes or until cookies are just beginning to turn golden on the edges. Remove from oven and cool completely before frosting.<br />

In a medium sized bowl, beat butter and cream cheese until smooth. Add vanilla. Add powdered sugar and salt. Stir until well combined. At our house, Valentine's Day means a fondue dinner. I've tried out a zillion cheese fondue recipes and this one is the easiest--perfect for a school-night V-Day celebration. I used Cheddar and Swiss, but you can switch it up and use Gruyere, Fontina, Emmentaler, or even Monterey jack instead. We like to dip french bread cubes, steamed vegetables and apple cubes.<br />

1 1/4 cups apple juice <br />
8 oz. softened cream cheese, cubed<br />
2 1/2 cups grated sharp cheddar cheese<br />
2 1/2 cups grated Swiss cheese<br />
2 1/2 Tablespoons flour<br />
dash cayenne pepper<br />
1/2 teaspoon garlic powder<br />
<br />
1. Heat apple juice in fondue pot over medium heat until almost boiling.<br />
2. Add cream cheese cubes slowly, stirring until cream cheese melts and mixture is smooth.<br />
3. In a separate bowl, combine cheddar, Swiss, flour, cayenne pepper, and garlic powder.<br />
4. Add grated cheese mixture to the fondue pot, a little at a time, stirring constantly until cheese melts and the fondue is smooth. If too thick, heat more apple juice and add to fondue until the desire consistency is reached.<br />
5. Serve with assorted dippers. 3/4 cup water<br />

1 package (3 ounces) cream cheese, cubed and softened<br />
3 kiwi fruit, peeled and thinly sliced<br />
1 1/2 cups fresh berries (blueberries, blackberries, raspberries)<br />

For crust:<br />
In large bowl, stir together flour, powdered sugar, and vanilla until well mixed. Stir in melted butter until well combined. Press crust into bottom and up sides of 9-inch tart pan with removable bottom. Pierce bottom of crust with fork. Bake in 350°F. oven until light golden brown, about 20 to 25 minutes. Cool completely on wire rack.<br />
<br />
For filling:<br />
In large microwave-safe bowl, whisk together granulated sugar and cornstarch. Gradually whisk in water. Microwave (high) for 3 minutes, stirring every minute, until sugar dissolves and mixture thickens. Add butter, lemon peel, and juice; stir until well mixed. In medium bowl, whisk egg yolks until well blended; slowly whisk in some of the hot sugar mixture. Whisk egg mixture back into hot sugar mixture. Microwave (high) until mixture comes to a boil and coats back of spoon, about 1 minute. Whisk in cream cheese. Spread filling in prepared tart crust. Cover and chill several hours or overnight.<br />
<br />
To serve: Arrange kiwi slices around outside edge of tart. In medium bowl, gently combine berries. Arrange berries in center of tart. Remove ring from pan and cut into wedges. Dust with powdered sugar just before serving.<br />

While I love to eat seafood and often choose seafood dishes at restaurants, cooking it myself is relatively new to me.<br />

Don't get me wrong, I've cooked it before, I'm just not as familiar with seafood as I am with beef or chicken or pork. <br />
<br />
To make sure that what I cook for my family is edible, I've been trying out salmon (a very forgiving fish) under the broiler. This way even with a new recipe dinner is quick, easy, and tasty despite my deficiencies in seafood cooking. And once I get my sea-legs, I'll venture out to other seafoods.<br />
<br />
Last night we tried out Lime Marinated Broiled Salmon, a quick, easy, healthy, delicious dish. We served it with roasted red potatoes and steamed vegetables. It would also be yummy with wild rice or rice pilaf and a fresh garden salad.<br />

<b>Ingredients:</b><br />
1/3 cup low-sodium soy sauce<br />
1/4 cup fresh lime juice (I did a little more--I used all the juice from 2 limes)<br />
1 teaspoon minced peeled fresh ginger<br />
1/2 teaspoon chopped fresh thyme<br />
2 garlic cloves, chopped<br />
4 (6 oz.) skinless salmon fillets<br />
cooking spray<br />
lime wedges<br />
<br />
<b>Directions:</b><br />
1. Place soy sauce, lime juice, ginger, thyme, and garlic in a blender, blend until smooth.<br />
2. Pour into a gallon sized Ziploc bag. Add salmon. Seal and marinate in refrigerator for 1 hour. Turn bag occasionally.<br />
3. Preheat broiler.<br />
4. Remove salmon from bag, discard marinade.<br />
5. Place salmon on broiler pan coated with cooking spray. (I put mine on a cookie sheet lined with a silicone baking liner)<br />
6. Broil 8 minutes. Turn, and broil an additional 4 minutes or until fish flakes easily with a fork.<br />
7. Serve with lime wedges. We're still here... and still cooking, even though it's been <b><i>6 months</i></b> {<i>Gasp !</i>} since we've last posted. Believe it or not, my iPhoto is full of food pictures, and my children now think it is standard practice to take a picture of their meal before dinner. I love my local grocery store, Fareway. They aren't open on Sundays (hooray!) and they sell their almost expired produce at reduced prices- including their bananas. My family LIKES bananas a bit on the brown side, so this is a major plus for our family. However, sometimes I get a little carried away and well, we have <i>lots</i> of <strike>brown</strike> black bananas. Luckily, <u><i>Cooking Light</i></u> about 10 years ago (gasp again!) did an awesome article on banana bread. 2. Combine flour, baking soda, and salt, stirring with a whisk.<br />
3. Place sugar and butter in a large bowl; beat with a mixer at medium speed until well-blended. Add eggs, one at a time, beating well after each addition. Add bananas and yogurt, beat until well blended. Add flour mixture; beat at low speed just until moist.<br />
4. Place chocolate chips in a medium microwave safe bowl, and microwave at HIGH 1 minute or until almost melted, stirring until almost smooth. Cool slightly. Add 1 cup batter to chocolate, stirring until well combined.<br />
5.Spoon chocolate batter alternately with plain batter into greased loaf pan. Swirl batters together using a knife.<br />
6. Bake at 350° for 1 hour 15 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes in pan on wire rack; remove from pan. Cool completely on wire rack.<br />
Yield: 1 loaf, 16 slices. <br />

2. Combine flour, baking soda, and salt, stirring with a whisk.<br />

Place sugar and butter in a large bowl; beat with a mixer at medium
speed until well-blended. Add eggs, one at a time, beating well after
each addition. Add bananas, yogurt, apple juice, and vanilla beat until well blended. Add
flour mixture; beat at low speed just until moist. Stir in 1/2 cup coconut.<br />

Place sugars and butter in a large bowl; beat with a mixer at medium
speed until well-blended. Add eggs, one at a time, beating well after
each addition. Add bananas, sour cream, and cardamom; beat until well blended. Add
flour mixture; beat at low speed just until moist. Stir in pistachios.<br />
4. Spoon batter into greased loaf pan. <br />

Bake at 350° for 1 hour or until toothpick inserted into
center comes out clean. Cool 10 minutes in pan on wire rack; remove from
pan.<br />
6. Cool completely on wire rack.<br />

I purchased a bag of limes the other day with the idea to make a "summery" tropical dessert. Since I have an ongoing love for both coconut and cheesecake, these bars sounded perfect- a cross between a tangy lemon bar and cheesecake squares, with a coconut crust. Make sure you refrigerate them if you want a firm cheesecake (as pictured above), I cut mine while still warm, and you can see from the picture below, they are quite soft. We still managed to eat more than half the pan (we had company over- but I had doubled the recipe), they were delicious!<br />

1. Preheat oven to 350°. Line a 9x9 or 8x8 square pan with parchment paper with a couple of inches of
over-hang. (Note: I doubled the recipe and put it in an half-sheet cookie pan. Obviously, this makes more, but also makes the crust and filling thinner, because both filling and crust are spread thinner. If you want really thick bars, use a 9x9 or 8x8, or if doubling, use a 10x14 pan.)</div>

2. Combine all the crust ingredients except butter, in a medium sized mixing bowl. Cut in cubes of butter to flour/coconut mix with a fork or pastry cutter. (Coconut makes it a little more difficult.) Mix until crumbly and well-combined.
Set aside 1/2 cup of the crumbs and press the remaining crumbs into the
bottom of the pan. Bake about 15 minutes, until it's golden brown. Mix lime zest (about 1 tsp) into reserved topping.<br />

3. While the crust is baking, in a medium sized bowl, beat the cream cheese until soft. Add the sugar and salt and beat until well blended. Directions:<br />
1. Cake: Preheat oven to 350°, with rack in center position. Coat one half sheet pan or two 9in. square cake pans with cooking spray, and line with parchment, leaving an overhang on 2 sides. Stir together rhubarb with one cup sugar, set aside. <i>(Note: I used the half sheet pan; it decreases the amount of cake in each cut square, which I like.)</i><br />
2. Whisk together flour, baking powder, and salt. Beat together butter, remaining cup sugar, and the lemon zest until light and fluffy. Beat in eggs one at a time, then beat in vanilla. Beat in flour mixture in two additions, alternating with sour cream, beginning and ending with flour mixture.<br />
3. Crumb topping: Stir together flour, brown sugar, and salt. Add melted butter and stir to combine until crumbly.<br />
4. Pour cake batter into pan(s). Spoon rhubarb mixture evenly over cake batter, and sprinkle with crumb topping.<br />
5.Bake until golden on top and cooked through, about 1 hour. Let cool completely in pan. Lift cakes from pan(s) using parchment. Cut into 2 in. squares.<br />

To mark the occasion, the kids wanted to have a "house selling party". Upon further discussion, the boys came up with this list of requirements for the party:<br />

<li>A zip line going from the kitchen to the downstairs family room</li>

The balloons and streamers were pretty easy to agree to. But unfortunately the zip line had to be nixed due to safety concerns. Thankfully, the kids were pacified about the lack of a zip line when I committed to making cheesecake.<br />

My family has been making this cheesecake recipe for as long as I can remember. I'm pretty sure my first bite of cheesecake <em>ever</em> was a product of this recipe. It is a tried-and-true, no fuss, simple, cheesecake that is easy enough to make anytime and fancy enough for special occasions--like house selling parties.<br />

<strong>Ingredients</strong>:<br />

<em>Crust</em>:<br />
1 1/2 cups graham cracker crumbs, rolled fine<br />
3 Tablespoons sugar<br />
6 Tablespoons unsalted butter<br />
1 teaspoon cinnamon<br />
<br />
<em>Filling:</em><br />
3 (8 oz.) packages cream cheese, softened<br />
1 cup sugar<br />
3 eggs<br />
3/4 teaspoon vanilla<br />
<br />
<em>Topping</em>:<br />
1 pint sour cream<br />
3 Tablespoons sugar<br />
1/2 teaspoon vanilla<br />
<br />
<strong>Directions:</strong><br />
1. Preheat oven to 300 degrees F.<br />
2. To make the crust, thoroughly mix all crust ingredients. Press firmly into a 9- or 10-inch spring form pan, lining bottom and partially up the sides. Set aside.<br />
3. In a large bowl or stand mixer, beat the cream cheese well until smooth. <br />
4. Add sugar to the cream cheese a little at a time, mix well.<br />
5. Add eggs, one at a time, mixing until combined after each addition.<br />
6. Add vanilla, combine thoroughly.<br />
7. Pour filling into crust, allowing at least a 1/2 inch of space at the top of the pan to allow room for topping.<br />
8. Bake for 60 minutes at 300 degrees F.<br />
9. While the cake is baking, prepare the topping.<br />
10. In a medium bowl, whip sour cream; add sugar gradually.<br />
11. Add vanilla, mix well.<br />
12. After the cake has baked for 60 minutes, pour topping over cake, covering completely.<br />
13. Return cake to the oven, bake for an additional 10 minutes. Posole Chicken Soup <i><span style="font-size: x-small;">adapted from HyVee Seasons magazine www.hyvee.com</span></i></h2>
Ingredients:<br />
2 (32 oz) cartons chicken broth<br />
2 (15.5 oz) cans white hominy<br />
2 (14.5 oz) cans fire-roasted diced tomatoes, undrained<br />
2 tsp. adobo sauce, from chipotle peppers in adobo sauce can<br />
2 cups plus 1/4 cup chopped fresh cilantro (about 1 bunch)<br />
1 tsp. dried oregano<br />
1 rotisserie chicken, skin removed, de-boned, and chopped (2-3 cups chicken)<br />
3 TBS olive oil<br />
1 cup chopped carrots<br />
1 cup diced yellow onion<br />
1 poblano pepper, seeded and diced<br />
2 avocados, seeded and chopped<br />
2 cups Mexican shredded cheese<br />
2 cups tortilla chips<br />
1 cup sour cream<br />

Directions:<br />
1. In a large stockpot, combine broth, hominy, tomatoes, adobo sauce, 2 cups cilantro and oregano. Stir in chicken. Cook and stir over medium-high heat until heated through.<br />

1/2 cup all-purpose flour<br />
1/4 cup unsweetened cocoa powder<br />
1/4 teaspoon baking soda<br />
1/4 teaspoon salt<br />
4 ounces bittersweet chocolate, chopped<br />
4 tablespoons butter<br />
3/4 cup packed light brown sugar<br />
1 large egg<br />
1/2 teaspoon vanilla extract<br />
1/4 cup semisweet chocolate chips (mini chips would be best)<br />
3 tablespoons sugar<br />
1 pint mint chocolate chip ice cream (or whatever flavor you want)<br />

<b>DIRECTIONS:</b><br />
1. Preheat oven to 325ºF. Line 2 rimmed baking sheets with parchment, silpat liners or lightly grease with cooking spray.<br />
2. In a medium bowl, whisk together flour, cocoa, baking soda and salt. In a large bowl, place the 4 ounces chocolate and the butter. Microwave on low power for one minute intervals until the chocolate and butter are melted and combined, stirring after every minute of cooking. Take care not to microwave at too high of power or the chocolate can scorch.<br />
3. Let the chocolate mixture cool slightly, then whisk in the brown sugar, egg and vanilla. Beat the mixture until it is well combined.<br />
4. Gradually stir in the flour mixture. Add the chocolate chips and mix.<br />
5. Roll the dough into about 16 balls (12 to 14 if you want larger ice cream sandwiches, or more if you want smaller sandwiches. I did about 20). Roll each ball of cookie dough in the sugar. Transfer the dough balls to the prepared baking sheets, placing about 2 inches apart.<br />
6. Bake the cookies until they are puffed, 12 to 15 minutes.<br />
7. Transfer the cookies to a wire rack and let cool to room temperature. Repeat with the remaining dough. When the cookies have all cooled, place them in the freezer in an airtight container until they are very cold. <i>(I skipped the step of freezing). </i><br />
<div style="font-weight: normal;">8. Remove the cookies from the freezer <i>(or just working with cooled cookies)</i> and working quickly, arrange half of the cookies bottom side up and top each with a small scoop of ice cream in the middle of the cookie. Use a cookie scoop for the ice cream for smaller cookies <i>(I used a cookie scoop)</i> or a regular ice cream scoop for larger cookies. Top with a second cookie and press together lightly. Wrap each in plastic wrap and freeze until firm, about 1 hour.<i> I just put mine in a pan in the freezer for about an hour. </i></div><div style="font-weight: normal;">9. When ready to serve, remove from freezer and let sit on the counter for a few minutes to soften. Serve and enjoy! </div><div style="font-weight: normal;"><br />

I also found it difficult to roll the dough into balls at first, so I refrigerated my dough a bit to stiffen it up- but that probably contributed to them not flattening as much. If you refrigerate the dough, try pressing the cookies with the bottom of a cup or your hand before you bake them for a flatter cookie. </div><div style="font-weight: normal;"><br />

Have you ever been to the Midwest in the middle of winter?!? The wind blows, the snow piles up, and the temperatures hover around zero degrees.<br />
<br />
In our little corner of The South, winter lasted about a month, and IF the temps dropped into the teens, people would hardly leave their houses. Here in the Midwest, people solider on, no matter what the temp is outside. It will take me some time to re-acclimate myself.<br />
<br />
In the meantime, I made this Hawaiian Chicken to remind me that there are warm times ahead. The combination of the savory teriyaki and the mandarin oranges & fresh pineapple makes it a perfect winter's-day-comfort-food, while at the same time being light enough to be enjoyed in the middle of summer.<br />

2 1/2 lbs. Boneless skinless chicken breasts, cut into bite-sized pieces<br />
1/3 cup vegetable oil<br />
1/3 cup teriyaki sauce <span style="font-size: x-small;">(We like SoyVay Veri Veri Teriyaki--or some other low-sodium teriyaki sauce)</span><br />
<span style="font-size: small;">1/4 cup soy sauce </span><span style="font-size: x-small;">(We use low-sodium, otherwise it's too salty)</span><br />
1 package onion soup mix<br />
1 20 oz. can pineapple chunks or tidbits<br />
1-2 11 oz. can(s) mandarin oranges<br />
1 fresh pineapple, cut into bite sized pieces, divided<br />
<br />
Heat oil in wok over medium high heat.<br />
Add chicken and let simmer till mostly cooked, about 7 minutes.<br />
Add sauces, soup mix, canned pineapple with juice, and 1/4 of fresh pineapple pieces.<br />
Mix together well..<br />
Cover wok loosely, turn down heat to medium and let simmer for 15-20 minutes or until chicken is glazed.<br />

1/2 cup shortening<br />
2 eggs<br />
6 medium apples--peeled and finely chopped<br />
2 cups flour<br />
2 teaspoons baking soda<br />
2 teaspoons cinnamon<br />
3/4-1 teaspoon nutmeg<br />
1 teaspoon salt<br />
1 cup chopped pecans (or walnuts)<br />

<u>Vanilla Sauce</u><br />
<br />
1 1/2 cups butter<br />
3 cups sugar<br />
1 1/2 cups evaporated milk<br />
1 1/2 teaspoons vanilla<br />
1-1 1/4 teaspoons nutmeg<br />

1. Preheat oven to 350 degrees. Generously grease and flour a bundt pan. (A 9x13 would work too, but the bundt pan makes it look prettier.)<br />
<br />
2. In a large bowl or stand mixer, combine sugar, shortening, and eggs. Mix well. Add apples, stir until combined.<br />
<br />
3. In a separate bowl, combine flour, baking soda, cinnamon, nutmeg, and salt.<br />
<br />
4. Add flour mixture to apples, mix until just combined. Gently stir in nuts.<br />
<br />
5. Pour batter evenly into bundt pan. Bake for 45-50 minutes.<br />
<br />
6. To make the Vanilla Sauce, combine butter, sugar, and evaporated milk in a medium saucepan. Cook over low heat for 10-15 minutes. Do NOT boil.<br />
<br />
7. Remove from heat; add vanilla and nutmeg, stir well. While still hot, serve generously over Apple Cake slices.<br />

I made this Creamy Chicken Alfredo the other night--after a long day of grey skies and stormy weather...and it definitely settled itself into the yummy-fall-day-comfort-food category. I'm ashamed to admit that I'd never made homemade Alfredo-sauce before...for some reason the possibility of it separating and having a grainy texture had always been intimidating to me. But this recipe was super quick----I had it on the table in about 35 minutes--and it tasted great with no separating. Not bad for a new recipe. I doubled the Alfredo sauce and put the extra sauce over noodles and served with steamed broccoli.<br />

1/4 cup all-purpose flour<br />
6 boneless, skinless chicken-breast halves (about 4 ounces each) (next time I'll pound these flat a little too so they cook more evenly)<br />
1/2 teaspoon salt<br />
2 Tablespoons plus 1 teaspoon olive oil, divided (or use butter for a richer flavor)<br />
3 cloves garlic, minced<br />
1 Tablespoon minced onion<br />
1 1/2 cups whipping cream<br />
1/3 cup grated Parmesan cheese (I used fresh shredded Parmesan because that's what I had)<br />
1/2 teaspoon coarsely ground black pepper<br />
1 Tablespoon coarsely chopped fresh parsley<br />

1. Preheat oven to 375 degrees. Place flour in a shallow dish or pie plate. Sprinkle chicken with salt; dredge chicken in flour until coated. Heat 2 Tablespoons olive oil (or butter) in large skillet over medium-high heat until hot. Add chicken; cook, turning once, until golden, 2-4 minutes per side. Remove chicken from skillet; place in a 9x13-inch baking dish.<br />

2. Heat remaining olive oil (or butter) in same skillet over medium heat until hot. Add garlic and onion; cook until garlic is fragrant and onion is tender, 1-2 minutes. Increase heat to medium-high; add whipping cream, Parmesan and pepper. Cook until sauce is bubbly and slightly thickened, 2-3 minutes. Spoon sauce over chicken in dish.<br />

3. Bake chicken until an instant-read thermometer inserted in center of chicken registers 180 degrees, 8-12 minutes. I guess it wasn't quite cool enough, because I made up these lime coconut rolls instead of making the traditional cinnamon ones. They turned out mouthwatering- tangy lime and sweet coconut in a soft lime-scented dough. Just right for the first touch of fall at the end of summer.<br />
<i>Notes: I like lime, if you want to accentuate the coconut, use less lime juice in the frosting and filling. You could also add coconut extract to the icing or filling to up the ante on the coconut. If you don't like the feel of coconut, but love the flavor, use only the cream of coconut and reduce the amount of lime juice in the filling. In the future I may try using coconut milk in place of regular milk in the dough.~W</i><br />

<u><span style="font-size: large;">Lime Coconut Rolls<span style="font-size: x-small;">(<i>dough adapted from McCall's Cinnamon Twist Bread)</i></span></span></u><br />

<u><span style="font-size: large;"></span></u>Ingredients for the dough:<br />
1 c. milk<br />
1/4 c. shortening<br />
1/2 c. sugar<br />
2 tsp. salt<br />
2 pkgs. active dry yeast (2 TBS instant yeast)<br />
1/2 c. warm water<br />
6 cups sifted flour<br />
2 eggs, slightly beaten <br />
2 tsp. lime zest<br />
<br />
For the filling:<br />
3 TBS lime juice<br />
3/4 c. cream of coconut<br />
1 1/2 cups sweetened, flaked coconut<br />
<br />
For the icing:<br />
1 c. powdered sugar<br />
1/2 -1 tsp lime juice<br />
1/2 c. cream of coconut<br />
1 -1 1/2 tsp. milk<br />
<br />
Directions:<br />
1. Scald milk; stir in shortening, 1/2 c. sugar and salt. Cool to lukewarm.<br />
2. Sprinkle yeast on warm water in large bowl: stir to dissolve. Stir in 3 c. flour, eggs and milk mixture. Beat with electric mixer 2 minutes at medium speed, scraping bowl occasionally. Or beat by hand until batter sheets off spoon. Mix in lime zest. Mix in enough remaining flour with hands, a little at a time, to make a soft dough that leaves the sides of the bowl.<br />
3. Turn out onto lightly floured board: knead until smooth, about 19 minutes.<br />
<i>Bread Machine Method: Put all ingredients into pan of bread machine. Use dough setting to mix and knead bread. Add lime zest with other ingredients or during second kneading. Continue with step 4. </i><br />
4. Place in lightly greased bowl: turn dough over to grease top. Cover and let rise in a warm place until doubled, about 1 1/2 hours. <br />
5. Gently deflate dough with hands. Cover and let rise again until almost doubled, about 30 minutes. Turn out onto lightly greased board or Rollpat. Let rest 10 minutes.<br />
6. While dough is resting, mix together lime juice and cream of coconut for the filling. <br />
7. Roll dough out into a 26" X 14 " rectangle. Spread with lime juice and cream of coconut filling. Sprinkle flaked coconut over the filling.<br />
8. Roll the dough up from the long sides, like a jelly-roll. Cut into 24 slices (about 1 inch each). Place in greased pan. (Will fill (2) 9X13 pans). Cover and let rise until doubled 45-60 minutes.<br />
9. Bake in a 350° oven for 18- 20 minutes or until tops are golden brown. If using glass or dark pans, watch carefully, so as not to burn the bottom of rolls. <br />
10. Remove from oven and let cool slightly.<br />
11. While rolls are cooling, mix together icing ingredients. Mix until smooth. Use enough milk to make a thick drizzle. Drizzle and spread icing on warm rolls.<br />
12. Serve warm or at room temperature. We bring it out in the bleak winter months and eat it right out of the jar with chips. </div><div class="separator" style="clear: both; text-align: left;"><br />
</div><div class="separator" style="clear: both; text-align: left;"><span style="font-size: large;"><u>Whitney's Garden Salsa</u></span> </div><br />
Ingredients:<br />
14 cups peeled, chopped tomatoes<br />
5 medium onions, coarsely chopped (about 2 1/2 cups)<br />
2 green bell peppers, chopped<br />
8 jalapeno peppers seeded and chopped (wear gloves while seeding and chopping)<br />
8 cloves garlic finely chopped<br />
2 5.5 oz. cans tomato paste<br />
1/2 cup white vinegar<br />
1 bunch cilantro, chopped<br />
1 tsp. ground cumin<br />
4 TBS. salt (use less, if desired)<br />
1 large lime, juiced<br />
<br />
Directions:<br />
Boil all ingredients together in a large stockpot for about 30 minutes to thicken.<br />
Put in hot jars. Seal. Water bath for 20-25 minutes. Makes 10-12 pints.<br />
